
I am kinda proud of myself! After 2 hours, 3 mexican grocery stores, and one 10 year old mexican girl later...we found empanda shells! Here is my first attempt at them. We loved them! They are stuffed full of beef, onions, corn and cheese...so really, what's not to love??
I think empanda making is going to be my new obsession...or at the very least, my new potluck food.
Anyone have any ideas on what to stuff in them next?? I am thinking some sort of creamy chicken!?? There might even be a prize for best filling idea!!
